■ Cinnamon may be a spice obtained from the inner bark of several tree species of the Cinnamomum genus. Cinnamon is primarily used as a flavoring condiment and flavoring additive during a big variety of cuisines, sweet and savory dishes, breakfast cereals, snacks, teas, and traditional foods. The aroma and flavor of cinnamon comes from its volatile oil and main component, cinnamaldehyde, also as many other components, including eugenol.

1. True cinnamon is also called Ceylon cinnamon or the oldest sweetwood known as a tree spice.

2. The economic part is the dried c.verum bark.

3. 3. It is widely used as a spice and condiment.

4. Native to tropical southwestern India and Sri Lanka

5. Cassia is properly known as Chinese cinnamon, false cinnamon or bastard cinnamon.

USE OF CINNAMON 

■ Every part of the tree to know. bark, wood, leaves, buds, flowers, fruits and roots are used for different purposes. 

■ Eugenol contains a clove-like oil useful in the perfume and flavor industry. 

■ Nuts are sometimes used as an adulterant on cloves.

 ♢ COPPICING - CUTTING A YOUNG TREE NEAR THE GROUND PRODUCES A CORRECT SITE THIS PROCESS IS CALLED COPPICING . 

 ■ Usually the plant is cut after 2 years and the steam is cut off at a distance of 10-15 cm from the ground and covered with soil. 

 ■ This favors the formation of shoots. 

6. It is a hardy plant.

7. Tolerant to a wide range of climatic and soil conditions.

8. Ideal annual rainfall: 200-250 cm.

9. The most widespread method of propagation is through seeds, also by propagation by cuttings and layering.

10. Flowering - January,

      fruit ripening-June-August.

11 six-month-old seedlings are transferred to clay pots or plastic bags.

12. Transplant into the main field when they are about 12 months old in a 3m space in both directions.

13. Sowing time June July.

14. The cinnamon tree can reach a height of about 10-15 cm.

15. Two varieties: sweet cinnamon and honey cinnamon.

Difference between cinnamon bark and cassia bark

1. Smooth and fine bark. 1. Thick and thick bark.

2.bark powder is an eyelash powder. 2. Brown-reddish color.

3. Relatively less intense aroma. 3. More intense aroma.

4.Eugenol is the main flavor 4.not so mild.

 6. The taste is good.
